a slight mistake in your list : it's Tom Waits' Rosie performed live by the wandering sons.
Thanks for the link.

Personally, I would've chosen a different line-up if were to do a cover show.

My selection here http://delicategeniusblog.com/?p=94

Any other notables that should be included in the list?

Well... I wouldn't have done the Hootie cover, for sure ;-)

Would've put in the Willie Nelson "Picture in a Frame," TW's cover of "King Kong," John Hammond's "2:19," Los Lobos doing "Jockey Full of Bourbon," one of Ute Lemper's covers (either "Purple Avenue" or "The Part You Throw Away"), maybe Tori Amos' version of "Time." TW doing "Sea of Love." Plus the two Mr. Eyeball mentioned - Solomon Burke and Norah Jones...

If we could use live covers I'd put in TW's covers of "Take It As It Comes" and "Fever," I think.

Some of my favourites not already mentioned include: Solveig Slettahjell - Take it With Me; Sarah Jane Morris - Blue Valentines; Niamh Parsons - The Briar and the Rose; Juliet Turner - I Hope I Don't Fall in Love With You; Nanci Griffith - San Diego Serenade; Jeff Lang - Goin' Out West; Elvis Costello & the Brodsky Quartet - More Than Rain; Angela McCluskey & Tryptich - Soldier's Things; Anne Sofie von Otter - Take it With Me; The Cottars - The Briar and the Rose; Jennifer Warnes - Invitation to the Blues; Buck 65 - Singapore; Luke Doucet - Gun Street Girl; Ashley Cleveland - Jesus Gonna Be Here

Incidentally, I think Hoootie and the B.'s take on IHIDFILWY is the work of the devil; and not in a good way ;)

I might have been tempted to throw Manhattan Transfer's version of Foreign Affair as well.

For a full list ( about as complete as you can wish for ) check out the covers list at the Tom Waits Supplement.

There are a lot of covers out there, probably far more than you imagined. I like the Jennifer Warnes one

If anyone wants any of the covers I've listed (or others - not including the tribute cds, I have around 100), let me know. I've found I can send, on average, about three mp3s at a time via e-mail.
